"In the whites," says Vincent Morey, "I'm looking for for something rich, fat and rounded, with the emphasis on buttery notes. They combine aromatic freshness with good keeping potential."

"In the reds, we make sure that maximum fruit reaches the bottle. We want to get as far away as possible from any hint of astringency and create delicacy. That's why it's so important to pick the Pinot only when fully mature. Our red wines can be drunk young."
